Marzolino is one of the most prestigious Tuscan cheeses and caries an ancient tradition.
When Caterina de Medici went to France to marry Henry II and become queen, she caried "good quality oil, beans and marzolino" with her. Cosimo de Medici sents presents of "vinsanto and marzolino" to the Pope in the 16th century.
Marzolino is still an important cheese, made with the best milk, also adding crushed chili. It is an exellent cheese at the beginning or the end of a meal., accompagnied by a young red wine from Montepulciano or Montalcino.
